Sweet Potato & Cauliflower Curry

Quick and very tasty recipe to put together in no time at all.

This is a very easy recipe that I put together one evening when I wasn't sure what to cook, and also we didnt have much in the way of food stock as it was time to go shopping. I was very pleased with the result.
Ingredients
3 tbsp olive oil
2 or 3 cups chopped cauliflower
2 diced sweet potatoes
2 Handfuls of chopped spinach
1 diced onion
Handful of chopped green beans
1 Garlic clove chopped
Thumb size piece of ginger chopped
1 vegetarian gluten free stock cube chopped
1 400g tin chopped tomatoes
Handful of raisins/currants
1 tsp curry powder
1 tsp paprika
1 tsp ground turmeric
1 tsp ground corriander
1 tsp fenugreek
Juice from half a lemon
Sprig of fresh parsley
Directions
Add the oil to a pan on a medium to hot
Add the onions and let them simmer for about three minutes
Then add the garlic and ginger and stir for a few minutes
Add the cauliflower, sweet potato and chopped tomatoes
Let that cook for a few minutes and then add all the spices
Once the sweet potatoes are softer add the green beans and stir for a minute or so
Then add the spinach and let it simmer until its cooked to your liking
Add rainsinsor currants and stir.
Let it simmer for about ten minutes.
Once served drizzle fresh lemon juice over the top with a sprinkle of parsley
