Tomato and Chickpea Soup

Very tasty and simple soup recipe. As always can be done in a soup maker or with a regular blender. Let me know how you get on.

Most of the soups that I make are really easy. I always put the oil in first and then just add all the other ingredients in and let the soupl maker do its thing.
If you dont have a soup maker dont sweat, its as easy if you dont.
Ingredients
If using a soup maker you dont have to chop things up as much. You will need:
1 400g tin chopped tomatoes
1 400g tin chickpeas (don't drain the water)
6 diced tomatoes
2 tbsp olive oil
1 large diced onion
1 tbsp balsamic Vinegar
1 tsp dried thyme
1 tbsp maple syrup
1 tbsp tomato puree
1 green chilli
2 garlic cloves
1 vegetarian stock cube
Instructions
Add the oil in to a soup maker then add all the ingredients. Fill the empty can of tomato juice with water and add to the mix. Enjoy.
If you dont have a soup maker then start by putting the oil into a pan and then add the onions and garlic and let cook for a few minutes.
Then add the can of tomatoes and let that cook for a minute or so.
Add everything else and let it cook for about five minutes.
Fill the empty can of tomatos with water and add to the mix.
Blend and enjoy !
