Carrot with Ginger Soup

Another tasty treat that is vegetarian and also gluten-free. It's very easy to put together and tastes very good.



If you have a soup maker, this can be made in a matter of minutes. Just add the oil first, then all the other ingredients, and let the machine do the work. If you prefer cooking, follow the recipe below for a delightful experience.


Ingredients


  • 2 tbsp olive oil

  • 1 small onion, chopped

  • 3 large carrots peeled and diced

  • 3 medium garlic cloves, minced

  • 1 tsp ground ginger (or you can use fresh)

  • 1 tbsp apple cider vinegar

  • 3 cups gluten-free vegetable broth

  • 1 tsp maple syrup

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper


Directions


  1. Heat the olive oil in a pan over medium heat.

  2. Once the oil is hot, add the chopped onion, minced garlic, and carrots along with the seasoning. Cook for about 8 minutes until softened.

  3. Stir in the ginger, apple cider vinegar, and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about ten minutes.

  4. Allow the soup to cool slightly before transferring it to a blender. Blitz until smooth.

  5. Enjoy your delicious soup!
