Carrot Soup with Ginger - Vegeterain

Another tasty treat that is vegetrain and also gluten free. Its very easy to put together and also tastes very good.

If you have a soup maker this again can be made in a matter of minutes. Its a case of adding the oil first and then all the rest of the ingredients and let the machine do the work. Or if you like to cook like I do then its fun following the recipe below.


Ingredients


  • 2 tbsp olive oil

  • 1 small onion

  • 3 medium garlic cloves

  • 1 tsp ground ginger ( or you can use fresh)

  • 1 tbsp apple cider vinegar

  • 3 cups gluten free veg broth

  • 1 tsp maple syrup

  • 1/2 tsp salt

  • 1/2 teaspoon ground black pepper


Directions


  1. Heat the oil in a pan on medium heat.

  2. Once it starts to heat add the onion, garlic, carrots and seasoning, and cook for 8 minutes.

  3. Stir in ginger, apple cider vinegar and broth, and bring to a boil then reduce the heat and simmer for about ten minutes.

  4. Let it cool off slightly and add it to a blender and blitz until smooth.

  5. Enjoy !!
