Vegetarian Four Bean Chilli

Looking for a comforting, no-fuss dinner? This hearty four bean veggie stew is just the thing.


Made with a mix of beans, fresh green beans, garlic, and onion, it’s a simple one-pot recipe that delivers big on flavor. It simmers into a rich, satisfying dish that's perfect for busy weeknights or lazy weekends. Top it off with whatever you love.


Ingredients


  • 2 tbsp olive oil

  • 1 yellow onion diced

  • 1 cup of chopped green beans

  • 2 garlic cloves diced

  • 1 400g tin red kidney beans rinsed and drained

  • 1 400g tin pinto beans rinsed and drained

  • 1 400g tin black beans rinsed and drained

  • 1 400g tin chopped tomatoes

  • 3 tbsp tomato puree

  • 1 tsp brown sugar

  • 1 tsp paprika

  • 3 tsp ground cumin

  • 2 tsp chilli powder

  • 1 vegetarian stock cube

  • Seasoning


    Directions


  1. Heat a large pot over medium heat and add olive oil along with the chopped onion.

  2. Sauté the onion for 2 to 3 minutes until slightly softened.

  3. Add the garlic and green beans to the pot and cook for another 5 minutes, stirring occasionally.

  4. Stir in the tinned tomatoes and then fill the tin half with water and swish it around to make sure you get all the tomatoes that have been left behind. Pour that into the pan.

  5. Stir in all the drained beans and the remaining ingredients until everything is well combined.

  6. Reduce the heat and let the mixture simmer for 30 minutes.

  7. Serve hot with your favorite toppings.
