Gambian Peanut Stew - Vegetarian

Another fabulous vegetarian dish that is so simple to put together and yet again has amazing flavours going on.



This Gambian inspired peanut stew is a rich, comforting vegeterian dish made with creamy peanut butter, tomatoes, vegetables and warming spices. Packed with nourishing ingredients and plenty of flavour, its delicious served with rice or crusty bread for a satisfying meal.


Gambian Peanut Stew - Veggie and Gluten & Dairy Free


Ingredients


  • 2 meduim size onions diced

  • 4 cloves garlic minced

  • 2 tsp chilli powder

  • 2 tsp ground cumin

  • 400g tin chopped tomatoes

  • 400g cannelini beans drained

  • 4 tbsp crunchy peanut butter

  • 3 tbsp tomato puree

  • 4 sweet potatoes peeled and diced

  • 1 veggie stock cube

  • 1 tsp salt

  • 1 tsp black pepper


Directions


  1. On a medium heat in a large pan fry the onion until soft, about five minutes.

  2. Add the garlic and allow to fry for about two minutes stirring constantly.

  3. Add sweet potatoes, tomatoes and spices and allow to cook for five minutes. You will need to half fill the tin of tomatoes with water and add that to the mix.

  4. Add the puree and stock cube and allow to cook for twenty minutes until potatoes are tender.

  5. Add all the remaining ingredients and allow to simmer for about fifteen minutes.

  6. Season to your liking and serve.

  7. Enjoy !!


This is a dish that I have been making for a while. now and reassure you its packed with flavour.
