Ingredients
4 tbsp olive oil
1 cup red lentils rinsed and washed
1 onion finely diced
2 carrots finely diced
2 celery sticks destrung and diced
2 garlic cloves minced
4 cups vegetarian gluten free broth
2 tbsp ketchup
2 tsp ground cumin
2 bay leaves
Juice of 1 lemon
Seasoning
Fresh parsley for garnish
Directions
Heat the oil over a medium heat in a saucepan.
Add onions, carrots,celery Pand garlic and let cook for about five minutes, stirring occassionally.
Then add the broth, cumin,ketchup, rand bay leaves
keep stirring every few minutes for about five minutes.
Add the lentils and then bring to the boil. Stir in the lemon juice and let simmer for about fifteen minutes until the lentils are soft.
Serve and enjoy.
