Nut Roast

This is a very easy nut roast that you can make in a short amount of time.

This recipe was a real puzzle to figure out. I grabbed ideas from a bunch of different nut roasts and played around until I got it just right. The trick? Pack it super tight in the loaf tin. That way, it holds together, and you can slice it up without it turning into a crumbly mess. Trust me, it's worth the effort!
Ingredients
40g Vitalite (plant based butter)
1 onion diced
3 celery sticks diced
1 garlic clove chopped
1 tsp ground coriander
100g gluten free breadcrumbs
100g dairy free cheese
2 eggs beaten
5 tbsp chopped fresh parsley
360g mixed nuts of your choice
Juice and rind of 1 lemon

Directions
1. Preheat the oven to 180oC
2. Line a loaf tin with parchment paper and set aside.
3. Melt the plant based butter in a pan, then add the onion, celery and the garlic. Stir occasionally and let cook for about ten minutes until soft. Set aside to cool.
4. Add the remaining of the ingredients to a mixing bowl and season well.
5. Spoon the mixture into a loaf tin, pressing the mixture down until its firmly packed.
6. Cook in the oven for 50 minutes to one hour.
7. Once cooked, take out the oven and flip upside down, garnish and serve.
This dish is a real winner paired with some yummy roasted vegetables - think crispy potatoes, sweet carrots, and whatever greens you're into. It's perfect for when you want to impress your friends at a dinner party or jazz up a special occasion meal. It'll be a hit!
