Another very quick and easy recipe to put together which is very tasty.

Gluten Free Lemon Drizzle Cake

This one-pot lemon sponge is a light, fluffy cake with a delicate crumb and the bright, zesty flavor of fresh lemons in every bite. Prepared in a single bowl, it keeps things delightfully simple—no fuss, no mess, just pure citrusy goodness. This lemon sponge is perfect as a dessert, afternoon treat, or even breakfast with a cup of tea. A sprinkle of powdered sugar or a drizzle of lemon glaze on top makes it a perfect balance of tart and sweet.


Ingredients


  • 3 tbsp vegetable oil

  • Zest from two lemons

  • 2 tbsp fresh lemon juice

  • 1 cup gluten free self raising flour

  • 3/4 cup granulated sugar

  • 1/4 tsp baking powder

  • 2 eggs

  • 1/4 cup plain greek yogurt

  • 1/4 tsp salt


    GLAZE


  • 1 cup caster sugar

  • zest from 1 lemon

  • Juice from 1 lemon


Directions


  1. Preheat the oven to 350F / 180C

  2. Line a pan with parchment paper around 9 inches and allow enough

  3. Put all the ingredients into a large mixing bowl

  4. Stir by hand until it becomes smooth

  5. Pour the batter into the lined tray and bake for approx 20 minutes

  6. Once removed from the oven leave it in the pan for about ten minutes.

  7. While its cooling make the glaze and por it over the cake

  8. Decorate with the lemon zest bits.
