Our Orange Almond Cake is a naturally gluten-free delight that brings together the sweet citrus of fresh oranges with the rich, nutty flavor of finely ground almonds. Made without any artificial additives or gluten-containing ingredients, this cake is perfect for those with dietary restrictions who don't want to compromise on taste. Finished with a delicate glaze or a dusting of powdered sugar, it's a wholesome indulgence that’s equally at home on a dessert table or with your afternoon tea.


Ingredients


  • 250g ground almond flour

  • 220g caster sugar

  • 6 eggs

  • 2 oranges

  • 2 tbsp brown sugar

  • 1 tsp gluten free baking powder

  • 4 tbsp orange marmalade

  • handful of flaked almonds


Directions


  1. Preheat oven to 180o C (350F) and line a 9 inch baking tray with parchment paper.

  2. Juice and zest both oranges

  3. In a large mixing bowl mix the ground almonds, caster sugar and baking powder.

  4. Add the eggs, orange juice and zest and stir to combine a wet batter.

  5. Pour the batter into the prepared cake tin.

  6. Sprinkle the brown sugar over the top and then place in the oven.

  7. Bake for 45 minutes.

  8. Remove from oven and once cool spread the marmalade over the top followed by the flaked almonds.

  9. Serve by itself or with cream.
