Ingredients
3 tbsp olive oil
1 diced onion
1 and 1/2 cups frozen peas
1/2 cup fresh chopped mint
1 tsp dried mint
1 tbsp mint sauce
1 vegetarian gluten-free stock cube
4 to 5 cups of water
Seasoning to taste
Preparation Steps
Heat the olive oil over medium heat in a saucepan.
Add the diced onion and let it cook for about five minutes, stirring occasionally.
Then, add the frozen peas along with all the remaining ingredients.
Stir well and allow the mixture to simmer for about ten minutes.
Blitz in a blender until it reaches your desired consistency. Serve and enjoy!
