Spinach Soup - Veg & Gluten Free

Another go-to bowl of comfort. This spinach soup is again very tasty and so adaptable. If you have a soup maker put the oil in first and then place all the ingredients in any order and follow your manufacturers guidelines.

Our gluten-free veggie spinach soup is a simple, wholesome dish that brings together the vibrant flavors of fresh vegetables and leafy greens without any gluten, thickeners, or fuss.
This soup is perfect for anyone following a gluten-free lifestyle or just looking to eat a little cleaner. It’s packed with nutrients.
Ingredients
3 tbsp olive pol
1 red inion diced
1 clove garlic chopped
1 tsp ground coriander
1 tsp ground cumin
1 gluten free vegetable stock cube in half pint water
260g washed spinach
Directions
Heat the oil over a medium heat in a saucepan.
Add onions and garlic, and let cook for about five minutes, stirring occasionally.
Then add the spinach, and all the remaining ingredients
Stir and allow to simmer for about ten minutes
Blitz in a blender un til it gets to the consistency you like.
Serve and enjoy.
