Vegan Cannellini Bean Stew

Very tasty dish which can be put together in a short space of time.

I have often used this when getting back from work and am not in the mood to do a lengthy meal. The ingredients are easy to access, and in fact Im sure most of you will have most of these items in your kitchen anyway.

Spices are so good and change a dish completely. The reason I put these flavours together like this is because I have always got these spices in the kitchen, as Im sure many people have.


Ingredients


  • 3 TS olive oil

  • 1 tin 400g cannellini beans

  • 1 tin 400g chopped tomatoes

  • 2 diced onions

  • 1 diced carrot

  • 3 garlic cloves minced or chopped

  • 1 tsp baharat spice

  • Handful frozen peas

  • 1 stock cube


Directions


  1. Heat the oil in a pan on a medium to high until the oil starts to heat trhough.

  2. Add onions and let cook for approx five minutes

  3. Add garlic and all other spices and let cook for a minute

  4. Add the carrots next and them them soften for a few minutes

  5. Then add all the other ingredients and let simmer for approx fifteen minutes


You can serve this with rice which is always nice and tasty as well, but mostly we just have it as it is. Its as simply as that. Enjoy your meal !!
