Carrott and Lentil Dahl

This is a very tasty mild Dahl which is vegan. You can make it in a short space of time and also its really good when you have it the following day. That might have something to do with the lentils being soaked.

Its a very simple and easy dish to make and can be made while you are doing other chores in the kitchen.
Ingredients
1 TS olive oil
500g grated carrotts
2 medium tomatoes diced
100g red lentils
1 tsp black mustard seeds
1 tsp cumin seeds
1 tbsp curry powder (mild or hot which ever you prefer)
1 garlic clove
1 tsp ground turmeric
1 tsp fenugreek
1 tsp garam masala
500ml vegetable stock
2 tbsp crunchy peanut butter
1 bay leaf
Fresh corriander or parsley
Directions
Grate the carrots and set aside.
Dice the tomatoes and set aside.
Place lentils in a pan cover with water and bring to the boil.
Remove froth on the top and close with a lid and allow to boil for ten minutes.
Heat the oil on medium in a large pan
Once the heat is hot add the bay leaf, mustard seeds and cumin seeds until they start to pop.
Reduce the heat.
Stir in the carrots, then add the curry powder and let it sweat for about ten minutes
Add the stock and lentils and simmer for 20 minutes
Add peanut butter and season with black pepper
Continue to cook for about five minutes until the lentils are cooked thru
Serve and Enjoy !!
