Chickpea Curry Vegan - Gluten Free

Vegan, Dairy Free and Gluten Free Curry which takes a very short amount of time to prepare and again as always packed with loads of flavours.

This dish is one of those that are really easy and quick to make. As always its very tasty because of the level of spice that I use/ If you are not a great spice person then try with a smaller amount of spices. The flavours should still be there but probably not as intense.


Ingredients


  • 1 400g tin chickpeas

  • 1 400g tin chopped tomatoes

  • 1 medium onion diced

  • Handful of sweetcorn

  • 1 ts ground coriander

  • 1 ts ground turmeric

  • 1 ts ground cumin

  • 1 ts garam masala

  • ½ cup (1 stick) unsalted butter, room temperature

  • 2 TS olive oil


Directions


  1. Heat the oil in a pan on medium heat

  2. Add the diced onions and let them sweat for a few minutes

  3. Drain the water from the chickpeas and add them into the pan

  4. Add all the spices at once

  5. Pour in the chopped tomatoes

  6. Add the sweetcorn

  7. Let it simmer for a about fifteen minutes

  8. As always serve with rice or on its own, and mostly.....enjoy!!
