Vegetarian Chilli Con Piante -

This is once again a very easy recipe to put together and tastes so yummy. You can serve this to friends for a casual dinner or you can have it as a mid week dinner when you dont want to spend hours in the kitchen. It is another gluten free and dairy free recipe which is super tasty and takes very little time to put together.

This recipe has so much flavour and can be served with rice and a fresh green salad. There is alot of goodness in this recipe as well. You can also serve it with a side dish of fresh plant based yogurt and some fresh lime squeezed over the top.


TOP TIP : If you can make this the day before its always better because the flavours then have time to mix and mature together.


Ingredients


  • 2 tbsp olive oil

  • 1 diced onions

  • 2 cloves garlic chopped

  • 220g viva era mince (or any of your choice)

  • 1 x 400g tin chopped tomatoes

  • 1 diced red pepper

  • 1 tbsp tomato puree

  • 2 red chillis sliced (for more heat add more)

  • 1 tsp ground cumin

  • 1 ts ground coriander

  • 1 ts ground cinnamon

  • 1 x 400g tin red kidney beans

  • 1 gluten free vegetarian stock cube

For Garnishing :

  • Handful of fresh coriander leaves

  • Seasoning

  • Fresh lime wedges

  • Dairy free yogurt

  • Green salad to serve

  • Rice to serve (optional)


Directions

  1. Heat the oil in a large saucepan preferably one that has a lid. Fry the onions and garlic until softened.

  2. Add the plant based mince and stir until all mixed in.

  3. Stir in chopped tomatoes, puree, kidney beans, spices and stock cube.

  4. Mix well, cover with lid and let cook for five minutes.

  5. Keep lifting lid every few minutes and stir

  6. Once ready, serve and enjoy


You can also serve this with some plant based yogurt and guacamole nachos. A splash of lime juice would just finish it off.
