Spicy Red Kidney Bean Soup

Dont be put off by the word spicy. You can add less chilli if you need to depending how you like or dislike heat in food. This recipe we have been using in our house for a few years now and it is very tasty indeed. Give it a go and let me know how you get on.

Another really lovely soup to make for any occassion If you have a soup maker just add the oil into the base and then all the ingredients at the same time Turn the mnakeron and you can do other things while its cooking and blending for you.
If you do not have a soup maker but you have a blender you can achieve the same result. The only difference is that you have to chop all the vegetables up yourself, which is always a nice relaxing task in the kitchen.
Ingredients
1 onion
3 garlic cloves
2 carrots
1 sweet potato
1 red pepper
1 veg stock cube
1 400g can red kidney beans
1 400g chopped tomatoes
1 tsp olive oil
1 tsp chilli powder
1 tsp ground cumin
1 tsp dried oregano
Directions
Peel the onion and chop into small pieces, chop the garlic.
Dice the carrots and sweet potato into very small pieces.
Deseed the pepper and dice in to very small pices.
Place the onion, garlic, carrots, sweet potato and carrots in a pan on medium heat with the olive oil and let simmer for about five minutes.
Boil 300ml of water and add the stock cube to that and stir until moxed. Once mixed stir into the pan.
Add the red pepper and chilli powder, cumin, oregano and stir into the mix.
Stir in the chopped tomatoes and season.
Add the kidney beans and stir in for a couple of minutes.
This can also be made in a soup maker. Add the oil intoithe maker and then put all the ingredients into the maker and job done.
If you want a chunk soup add the maker to the chunky setting, or the smooth setting can make it really nice and tasty as well.
