Beetroot Soup

Another very delicious easy to make soup. Its really important to use beetroot with the leaves and not the ones wrapped in plastic. I couldnt understand why it tasted so different and also looked a very different colour. So give this a go and let me know how you get on.


I always add a teaspoon of chilli flakes to most of the soups that I make, it seems to really intensify the flavours, but its optional.

If you have a soup maker add the oil first and then add all the ingredients in and let the maker do what it does while you do other things.


Ingredients


  • 3 to 4 apple sized beetroots diced

  • 6 medium sized tomatoes chopeed in quaters

  • 2 garlic cloves diced

  • 1 medium onion diced

  • 2 tbsp olive oil

  • 500ml gluten free stock

  • Seasoning

  • Feta or plant based yogurt for topping


Directions


These ingredients will be blitzed at the end.

  1. Heat the oil in a saucepan on medium heat

  2. Add the onion and garlic and let cook for a couple of minutes

  3. Add the chopped tomatoes and beetroot together with the stock.

  4. Let that cook for about ten minutes and then blitz.


This recipe has no spices in it but its a good thing because the flavour of the beetroot is so special it dosent need anything else.
