Raspberry Posset - Vegan

This recipe is quick and simple to make, perfect for preparing on the same day you plan to serve it. I've also made it a day ahead to save time, and it turns out just as great. Give it a try and let me know how it goes!
Ingredients
350g Raspberries frozen or fresh
1/3 cup caster sugar
1 cup plant based cream
Directions
Place the raspberries in a small saucepan on the hob over a medium to high heat.
Cook the raspberries until they break down and become a puree.
Remove from the heat and mash with a potato masker or a fork until everything is broken up.
Deseed the fruits by putting them in a large sieve and getting as much of the liquid out as you can by scvraping the bottom of the sieve.
Put the rasberries back on a medium heat and add the sugar.
Stir well to dissolve and remove from the heat and set aside to cool completley.
Pour the cream into a bowl and whip until firm peaks are formed.
Gently fold the raspberry puree into the whipped cream until it is all mixed well.
Divide the mousse into the amount of proportions you so desire.
Once in the bowls put it in the fridge until you need top serve it.
