Courgette Boats

Looking for a simple starter thats super tasty. This is the ideal recipe.

Courgette boats are such a fun and tasty way to make dinner a bit more exciting. You just slice the courgettes in half, scoop out the middle, and fill them up. Pop them in the oven, and they come out soft and full of flavour, with that perfect mix of fresh courgette and hearty filling. They’re easy to make, healthy without trying too hard, and a great way to use up extra courgettes hanging around in the fridge.
Ingredients
3 medium courgettes sliced lengthways
1 yellow onion finely chopped
30g plant based butter
2 minute packet of jasmine rice
1 tsp brown mustard seeds
2/3 cup veg stock
1/3 cup grated lactose free cheese
140g pesto
Directions
Preheat the oven to 180 fan.
Using a teaspoon scoop the flesh from the halves leaving a 5mm border around the edges to make a shell. Once thats done place them on a baking tray.
Place the onions on medium heat and let fry for about five minutes.
Then add the flesh together with the stock and mustard seeds into the mix.
Stir in the rice and cook for a few minutes.
Add the cheese and season.
Spoon the mixture into the cougette slices until they are packed. Theres always some left over so I usually just eat it. Trust me.....its delicous.
Bake for approx 30 minutes.
Remove from heat and spread pesto over the tops.
You have one thing left to do.....serve and as I always say....Enjoy!
