White Bean Soup - Gluten Free

This gluten-free white bean soup is one of those cozy, throw-it-together meals I make on repeat.


It’s creamy and hearty (without any flour or thickeners), packed with tender white beans, garlic, herbs, and parsnip. It’s simple, filling, and totally comforting — the kind of soup you want a big bowl of on a chilly night. Plus, it just happens to be naturally gluten-free, so everyone can dig in.


Ingredients


  • 3 tbsp olive oil

  • 400g can haricot or butter beans drained

  • 2 large white onions diced

  • 2 garlic minced

  • 4 celery sticks destrung and diced

  • 1 parsnip peeled and diced

  • 2 cups veg gluten free stock

  • 1 tsp mixed herbs

  • Dried onions for topping


Directions


  1. Add olive oil to pan on meium Yheat.

  2. Once the oil has heated through add the onions, garlic, celery and parsnip and let cook for a few minutes.

  3. Add the remaining ingredients and allow to simmer for about ten minutes.

  4. Blitz half the soup in a blender and put back into the pan.

  5. Serve with dried onions as garnish, and then youre done.

  6. Serve and enjoy !!
