This hearty winter soup is a simple and delicious way to stay warm. It combines tender Savoy cabbage, earthy lentils, courgette and sweet carrots in a flavorful vegetable broth.
Perfect for a cozy dinner or lunch, it’s packed with nutrients and full of comforting flavors. Enjoy it with crusty bread for a wholesome, satisfying meal.
Winter Vegetable Soup - Vegetarian
Ingredients
4 tbsp olive oil
1 large red onion diced
2 large carrots diced
2 celery sticks destrung and chopped
1 leek finely sliced
1 courgette diced
1/2 savoy cabbage
3 garlic cloves minced
1/2 cup dried red lentils
1 and 1/2 L boiling gluten free stock
2 tbsp tomato puree
1 tsp thyme or 1 tbsp fresh
1 tsp basil or 1 tbsp fresh
1 tsp Ras El Nout
Directions
Heat the oil in alarge pan with a lid. Add the onions, carrots and celery and fry for about 10 minutes, stirring occasionally.
Stir in the lentils and cook for a few minutes.
Pour in stock, add puree and thyme and stir well.
Add the leeks, cougette, and garlic and bring to the boil.
Put a lid on and allow to simmer for about 15 minutes.
Add the cabbage and basil and cook for about ten minutes.
Season , Serve and Enjoy.
