Our Edamame Bean Soup is a vibrant blend of tender edamame, fresh vegetables, and delicate herbs, simmered into a wholesome bowl of comfort. Packed with plant-based protein and naturally gluten-free, this vegetarian soup is hearty yet light, offering a nourishing balance of flavor and nutrition in every spoonful.
Ingredients
1 large onion diced
1 carrot diced
3 celery sticks destrung and diced
2 1/2 cups edamame beans
2 cups veg gluten free stock
1 tsp mixed herbs
1 tsp oregano
1 tsp garlic powder
1 tsp mint sauce
Directions
Heat the oil over a medium heat in a saucepan.
Add onions, carrots and celery, and let cook for about five minutes, stirring occasionally.
Then add the edamame beans, and all the remaining ingredients
Stir and allow to simmer for about ten minutes
Take half the mixture out and blitz in a blender until smooth.
Once blitzed put back into the pan with the mixture.
Stir well and then Serve and enjoy.
