Oat Raisin Gluten Free Cookies

These gluten-free oat and raisin cookies are the kind of cozy bake you make when you want something simple and comforting.



Also they’re packed with hearty oats and sweet, juicy raisins. Rustic, homemade, and quietly wholesome—perfect with a cup of tea or coffee straight from the oven.


Ingredients


  • ½ cup vitalite (plant based butter)

  • ½ cup white granulated sugar

  • ½ cup brown sugar

  • 1 medium egg at room temperature

  • 1½ cups gluten free oats

  • ½ cup raisins

  • 1 cup gluten free flour

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • ½ tsp bicarbonate soda

  • ¼ tsp xanthan gum

  • 1 tsp salt

  • ½ tsp ground coriander


Directions


  1. Pre heat the oven to 180 C

  2. Place parchment paper onto a metal tray large enough to hold about 12 cookies.

  3. Put all the ingredients into a mixer with the dough fitting or mix by hand. When doing it by hand I use one hand and get it going thru all my fingers as well.

  4. Scoop out tablespoon sizes and lay out onto the paper on your tray until your mixture is finished.

  5. Place in the oven for 20 minutes.

  6. Remove from the oven and set aside until they have cooled off.

  7. You can remove them and place them on a wire tray to cool off, but be careful because they will be soft. Thats why I waited about five minutes for them to cool on the tray first. Then I moved them onto the wire rack.

  8. Serve and enjoy.
