Gluten Free Dairy Free Banana Bread
I have made this so many times in the past I have lost count. Its a really easy thing to put together the same day if you are having guests in the afternoon. That way the smell fills the entire place making it a lovely warm welcome for your guests.

Its really simple to ut together. I always get all the ingredients prepared before hand then when it comes to putting it together it only take sminutes.
Ingredients
3-5 bananas mashed
1/2 cup vegetable oil
1 ts Bicarbonate of soda
2 cups gluten free self raising flour
¾ cup of sugar
2 Eggs whisked
1 ts vanilla extract
Pinch of salt
1 ts ground cinnamon
1 ts ground nutmeg
Mixed raisins optional
Directions
Preheat oven to 180°C or 350 ℉
Line a loaf tin with parchment paper or prepare a silicone tray
Whisk the eggs together in a large bowl and set aside.
Mash the bananas in another bowl or dish and then add to the eggs.
Add vanilla extract to egg mixture, together with the oil.
In a separate bowl add all the dry ingredients, and mix together.
Pour all the wet mixture into the dry mixture and mix well by hand
At this point I add raisins or currants to the combined mixture.
Pour ingredients into prepared loaf tin.
Put in the oven centre tray for 45 minutes
When you take the loaf out the oven insert a toothpick or a knife to check if cooked. If not put it back for another five minutes.
Take out the oven and leave to cool for 10 to 15 minutes
Cut and serve as you wish. Its great served with Vitalite
There are many ways to serve this as I have demonstrated in the main picture and below is how I serve it with natural plant based yogurt and maple syrup.

You can be really fancy and serve it with a bit of mint on the side.
