Sweetcorn Chowder

Sweetcorn Chowder can be served as a soup or a light meal with rice. There are a number of different ways that you can serve this dish. Its very tasty and takes very little time at all.

Sweetcorn Chowder

Again another easy recipe to follow that taste delicious. When we have this as a mid week dinner we usually have it on its own without rice or any added bits.

It can have all sorts of additional sides to it if you wanted it too.


Ingredients


  • 2 tbsp olive oil

  • 1 diced onion

  • 1 minced garlic clove

  • 1 red pepper diced

  • 3 celery sticks diced

  • 1/4 tsp chilli flakes

  • 4 1/2 cups of frozen sweetcorn

  • 1 gluten free vegetable stock cube chopped

  • 400ml tin coconut milk

  • 1 heaped tsp smoked paprika

  • 4 spring onions

  • handful fresh coriander

  • Wedge of lime to garnish


Directions


  1. In a large pan with a lid heat the oil over a medium heat

  2. Add the onion, red pepper celery and chilli flakes and cook for about 5 minutes

  3. Add the sweetcorn, stock, coconut milk, spring onions and smoked paprika

  4. Cover with a lid and cook for approx ten minutes stirring every few minutes.

  5. Remove from the heat and season with salt.

  6. Take 1/3 of the chowder and add to a blender and blitz

  7. Once blitzed pour back into the main dish and mix well

  8. Serve with fresh coriander sprinkled over the top and a lime wedge to garnish

This will represent what a soup looks like. I always add two teaspoons of corn flour at the end which thickens it up and then it looks more like a Dahl and can be served with rice.

A delicious, easy and quick to make meal.


I know Ivor’s recipe are vegetarian and vegan but meat eaters could add meat or fish to this.
