Sweet Potato and Kale Soup

If you’re craving something cozy but still want to keep things light and nourishing, this soup is a winner. You can roast the sweet potatoes or just boil them. Even easier if youre short on time diced them small and then just add them to the pot with the onions at the start.

The sweet potatoes turn soft and almost creamy as they cook, giving the broth a naturally sweet flavor. Toss in a few cups of kale and you get that earthy balance (plus a pop of green that makes the pot look gorgeous).

It’s the kind of soup that feels like a warm hug on a chilly day. Simple ingredients, nothing fancy, but it tastes like you spent way more time on it than you did. Serve it up with some crusty bread, and you’ve got yourself the perfect easy dinner.


Ingredients


  • 3 tbsp olive oil

  • 1 yellow onion

  • 2 large sweet potatos

  • 4 cups kale leaves

  • 4 garlic cloves

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground ginger

  • 1 tsp ground turmeric

  • 3/4 tsp salt

  • 1 vegetarian gluten free stock cube

  • 3 cups coconut milk or soya


Directions


  1. Add the oil to a large soup pan on a medium heat. Once hot add the onions, garlic sweet potatoes and let them cook for a about four minutes. Then add all the spices together with the seasoning.

  2. Add the chopped kale and cover the pot. Allow it to cook for about four minutes.

  3. Add the soya and broth and let cook for about five minutes.

  4. Remove half the mixture and blend.

  5. Put the mixture from the blender back into the pot, stir and allow to cook for about a minute.

  6. The best part......Serve and Enjoy !!
