This Broccoli and Grape salad is not only delicious but also incredibly simple to prepare, making it a perfect addition to any meal or a delightful standalone dish. The combination of fresh, crunchy broccoli with the sweet juiciness of grapes creates a unique flavour profile that is both refreshing and satisfying.

This salad is not only great for family dinners but also works wonderfully for potlucks, picnics, or as a side dish. It's perfect for picnics or packed lunches.


Broccoli and Grape Salad - Gluten / Dairy Free - Vegan


Ingredients


  • 2 cups diced broccoli

  • 2 cups red grapes cut in halves

  • 1/2 cup flaked almonds


For the Dressing


  • 3/4 cup vegan mayonnaise

  • 2 tbsp dijon mustard

  • Juice from 2 lemons

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • 1 garlic clove minced

  • seasoning


Directions


  1. Add a non stick pan to the hob and once its heated up dry fry the almonds moving them around until they are toasted. Removed them from the pan and set aside.

  2. Steam the broccoli over a pan of hot water for a minute and then remove , and set aside. Or you can boil them for a minute and then drain the water and let the broccoli dry out.

  3. Wash and cut the grapes in halves.

  4. Make the dressing by adding all the ingredients to a small bowl.

  5. Add the dressing to the broccoli making sure is cold.

  6. Stir the dressing into the broccoli mixing it in well.

  7. Always add the grapes last so you don't have to mix them too much.

  8. Set the salad aside for about half an hour.

  9. When you are ready to serve it spread the toasted almond flakes over the top.

  10. Serve and enjoy !
