Som Tam Salad - Vegeterian Thai Salad
Ingredients
1 cup green papaya shredded
1 cup carrot shredded
8-10 green beans
1 garlic clove
1 or 2 birds eye chillis
2 tomatoes quarted
1/4 cup peanuts
1 cup lettuce leaves shredded
1 large spring onion
DRESSING
2 tbsp gluten free soya sauce
1 Lime(Juice)
2 tsp dark brown soft sugar
2 tsp tamarind paste
Directions
Shred the papaya and carrot and place into a bowl
Chop the spring onion and add to the main bowl
In a mortar, smash the garlic and the chillis until it forms a paste
Add the peanuts and beans and smash for a few seconds and put into the mix with papaya and carrot.
Add the tomatoes to the mortar and pestal and smash for a few seconds. be careful to to smash them into piecs. You want to just gently smash them. Add them to the main mix.
Mix the the sugar, soy sauce,tamarind paste and lime juice in a small jug to form dressing
Pour the dressing into a small jug and add on the side.
This salad is hot and spicy. You can tame the heat by only putting one chilli in.
