Three Bean Salad - Vegetarian
Ingredients
1 x 400g can of chickpeas
1 x 400g can of red kidney beans
1 x 400g can of cannellini beans
3 celery stalks, destrung and chopped
1 medium cucumber, diced
1 red onion, diced
4 tbsp fresh chopped parsley
Dressing
3 tbsp olive oil
Juice of one lemon
1 tsp Dijon mustard
Seasoning to taste
Directions
Drain the liquid from all the cans.
Chop the celery, cucumber, onion, and parsley.
Put all the ingredients into a bowl.
In a small jug, mix the dressing ingredients together.
