Ingredients


  • 1 x 400g can of chickpeas

  • 1 x 400g can of red kidney beans

  • 1 x 400g can of cannellini beans

  • 3 celery stalks, destrung and chopped

  • 1 medium cucumber, diced

  • 1 red onion, diced

  • 4 tbsp fresh chopped parsley


Dressing


  • 3 tbsp olive oil

  • Juice of one lemon

  • 1 tsp Dijon mustard

  • Seasoning to taste

  1. Drain the liquid from all the cans.
